Lady Marmalade: lightly salted caramel mousse, Yuzu and Kalamansi gelee on a spiced orange soaked sponge finished with chocolate velvet
Delightfully light and fragrant but lacking a bit of crunch I thought.
Chocolate cloud: chocolate mousse, vanilla cream, crunchy cocoa nib disc over flourless chocolate sponge
Hazelnut heaven: hazelnut praline mousse, currants in calvados bavarose with crunchy hazelnut base
Still my favourite one of all!
